James has been secretly working on our rendition of the brand new “Brut IPA” style of beer: reminiscent of Champagne, it can be recognized by its effervescence, clarity, and extreme dryness.

Background

The Brut IPA style was cultivated recently in San Francisco, at Social Kitchen & Brewery, by Kim Sturdavant, the brewmaster there. The main components of the style, per the creator’s instructions, are an extremely light colored beer with excellent clarity, heavily dry hopped and a fermentation aided by an enzyme that allows for a completely dry beer with no residual sugar.

The style designation “Brut” refers to the levels of dryness in champagne. There are definitely champagne-like elements to this beer. The high carbonation, light body, and floral hop bouquet are reminiscent of it at times.

Tasting Notes

Aroma: Floral and fruity from the dry hops.

Flavor: At first dominated by fruity hops then transitions to a strong bitterness.

Mouthfeel: Light and effervescent. Refreshing before the finish.

Aftertaste: Dry (duh) with lingering bitterness.

Hops: Ekuanot, Citra, Centenial, Mosaic, 

Yeast: Ale yeast
